White Cake Mix-

Taken from A Guide to Good Cooking with Five Roses Flour

1 3/4 cups sifted Five Roses Enriched Flour      1 cup granulated sugar

2 1/2 teaspoons baking powder                               1/2 cup shortening

1 teaspoon salt

Sift together three times the flour, baking powder, salt and sugar. Cut or rub in shortening until thoroughly mixed. Lift mix into a glass jar or tin can without packing. Close tightly and store on pantry shelf.

To use– Turn mix into bowl. Mix in second bowl: 2 eggs, 2/3 cup of milk and 1 teaspoon of vanilla. Add half of liquid mixture to cake mix and beat 1 minute. Add rest of liquid and beat 2 minutes. Pour into a lightly greased cake pan. Bake at 325 deg. F., 35 mins for layers or 50 mins for a square or round cake.

Variations

Orange– Omit vanilla. Substitute 3 tablespoons of orange juice for 3 tablespoons of milk an add 2 tablespoons of grated orange rind.

Spice– Sift and add to the dry cake mix: 3/4 teaspoon of allspice, 3/4 teaspoon cinnamon, 3/4 teaspoon nutmeg and 1/2 teaspoon of cloves.

Chocolate– Add 2 squares of melted chocolate to the batter after the first liquid addition.

Chocolate Icing

1/4 cup butter or Margarine

1/2 cup cocoa

1/3 cup milk

1/4 tsp salt

1 1/2 tsp vanilla

3 1/2 cup icing sugar
